About Hazaki Knives - Hazaki, founded by Samuel Bouchard in Montreal, Canada, combines the best of both worlds: Japanese knifemaking and Canadian woodwork. Blades are expertly forged in Seki, Japan, from high-end Japanese steel and finished with beautiful handles in Montreal by Samuel and his team. Their knife blocks and magnets are expertly handcrafted in Canada from sustainably sourced woods.
I’m a sucker for a pretty blade, and this damascus steel is such a delight. On top of that, the whole line has badass kiritsuke tips and gorgeous dark walnut handles - I’m in love. While a pretty knife never fails to get me inspired in the kitchen, a knife needs to cut as well as it looks. Lucky for you and I, this blade is wicked sharp. Hazaki has used VG10 stainless steel, which keeps a brilliant edge but doesn’t require a ton of maintenance.
Hazaki prefers the natural look and feel of the Canadian wood used in their handles, so they are not sealed. I recommend a light coat of cutting board wax every few months to keep them looking and feeling great!
About the Shape - This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.

"This knife is a joy to use. We mostly use it for slicing smaller vegetables or paring. It was a gift for my spouse and it was the perfect balance between being something special and being very practical."
"I purchased this knife for my son in law to add to his collection of Knifewear knives. He loves it and has received compliments on it. It’s the perfect size for small chopping, mincing jobs and, of course, looks beautiful as well."
"Good for handle fruit and garnish"

"Love this knife. I didnt know how much i need a good paring knife before this. Leaps and bounds above my old cuisinart. It is so sharp out of the box!"
"Good little paring knife to add to any collection. Highly recommend!"
"This was a perfect gift for my partner who is a very good cook."
"Has been my go-to for small/medium tasks daily. Treated like a chef knife for testing. Straight up. Some things I like and don’t like. I like the VG10 blade material. It’s thin. And hard enough to keep its edge for a long time while steel being easy to sharpen in my opinion. 0% chance of rust/patina, could be a pro or con to you though, I enjoy both and personally, my petty knives must be stainless. I like the shape. Kiritsuke is my preferred shape and to have it in this petty format is great for my style of cooking. I like the handle angle relative to the cutting edge, may not suit fatter fingered individuals. It’s super nimble and precise. I don’t like the raw walnut handle. I’ve realized the irony having an ever-sharp stainless steel blade with a raw wood handle. Low maintenance on one end, regular maintenance on the other! I don’t mind keeping the beautiful walnut dry and topped with beeswax but it’s kind of funny no? Lastly, I don’t like the laser engravings. It just feels wrong. They are a tad blurry and takes away from the beautiful Damascus pattern. Overall this is a good value petty knife."
