If it long term edge retention you’re after, this Arashiyama 6000 grit is a perfect stone to finish your carbon steel knives. This stone doubles as a “stepping stone” if you plan to take your knives up to 8000, 10,000, or 12,000 grit. Once you put steel to stone it's easy to see why the Arashiyama 6000 has a great reputation among professional sharpeners in Japan. This stone requires a Nagura stone to maintain its performance.

When to use this stone

  • Great for putting a strong working edge on your Japanese knife made from Shirogami or Aogami steels.
  • Soft stone, very easy to use for core polishing and contrasting. Excellent for knife thinning on wide bevel knives / Knives with pronounced Kireha.
  • Ideal for sharpening speciality tools as well as your Japanese Kitchen knives.
  • If you are looking to go up to a higher grit stone, this is a great midway point.
  • Soak very briefly before use, excellent for Japanese carbon steels. Quite a soft stone, be wary of your angle to avoid gouging.

Sharpening knives can be one of the most satisfying and fun skills to learn and do. Whether you’re an old hand at sharpening, or just starting out, we want to give you a few tips to help you get the most out of your water stones. If you have any questions about care or technique, please feel free to get in touch, our contact information is below.

Waterstone tips:

  • Use plenty of water. Periodically splash your stones with water as you use them to prevent the stone from plugging up with residue.
  • Some stones require soaking in water for about 20 minutes prior to use, others only require a splash of water while sharpening. Knifewear brand stones tell you what they require on the package. A good way to tell which a stone requires is to splash it with water, if the stone immediately sucks up all the water on it, soak it. If it
    pools on top don’t soak it.
  • Stones take on steel residue with use. A small Nagura stone can help clean the surface like an eraser.
  • Use a truing stone to keep the stone surface flat. Softer stones might require this before every sharpening session. This will help you to maintain the correct angle for sharpening, which is critical for creating the best knife edge.
  • We suggest lightly beveling the edges of the stone with a truing stone to avoid cutting yourself, and to prevent chips from coming off.
  • In dry climates, certain stones can be vulnerable to cracking if they dry too quickly. To avoid this, wrap these stones in a damp tea towel and allow to dry more slowly. These include the Knifewear 4000 and 8000, as well as the Naniwa Professional series.

Important!

  • Do not keep stones in direct sunlight, extreme heat or cold
    (e.g. Inside a car in winter) and avoid dropping them.
  • Always wipe excess water off from the stone before storing.
  • Never ever use oil on a water stone. It will ruin it.
  • Have fun!

Best carbon steel sharpening stone.

"I’ve been sharpening Japanese knives with Japanese Whetstones for about a year now. Lots of help learning from Knife wear. Thought I was doing really well learning on my carbon steel knives with Shapton and Naniwa. But wholly cow this stone changed my sharpening life! I thought it was great initially, but then got a nagura 8000 grit stone and my knives came alive. Thin paper cuts almost silently and food cuts like nothing I could have hoped for. Think I’ll buy another of these stones in case I ever drop this one. And for the price I hope you’ll try it. P.S. also works wonders on SG2!"

For a few years I've

"For a few years I've had good results progressing from 1000 to 4000 and then to leather strop. I bought the Imanishi 6000 to get a better polish before the strop and am very satisfied with the result. I was warned that this stone was quite soft but have not found that to true. The size is excelent and I really enjoy the the convenience of splash and go."
