The Naniwa Professional Chosera Stone 600 Grit is a slightly finer version of the 400 grit stone. If you are sharpening a knife that gets a lot of work in a professional kitchen this is a great stone to finish a western knife on.
When to use this stone:
Always flatten your stone with a truing stone after sharpening.

"These reviews are always a bit awkward to continue with but this stone has prove itself to be a great starting point. We have 4 cooks in the family and they mange to butcher more knives than meat. The 600 grit was, I thought, a bit more than necessary to start with but it has proven to be a great 'stepping stone' to t he 2000 grit for average knives."
