Stainless steel is super handy because it doesn’t rust or stain easily like carbon steel. That said, remember it is stain-less, not stain-never. While it is much easier to care for than high-carbon steel, it does benefit from proper use: use it, wash it, dry it and put it away. Always avoid the dishwasher!

USE

• Only cut food you can bite through with this knife. Hard foods can chip the blade. No olive pits, bones,  lobster shells, woody stems or parmesan rinds. Cutting frozen food is especially bad  because the cold will make hard steel even more brittle. If you wouldn’t chew it with  your own teeth, don’t cut it.

• Your cutting surface is the biggest culprit of dulling your knife. Use wood. End  grain wood is especially good. Plastic can be fine too, but certainly not glass,  granite or bamboo

• The edge of your knife works best sliding forwards or backwards. Scraping the  knife edge sideways will dull or damage the edge. Instead, use the spine of the knife to move foods across the cutting board. Do not twist the edge or pry with the edge, this is the worst screwdriver you ever bought and these motions will certainly  damage the edge. Listen to the knife! If you can hear the edge making a “tink”  sound on the cutting board, change what you are doing.

CLEANING

• After use, wash the knife by hand with regular dish soap, rinse with hot water  and dry by hand immediately. Dishwashers are very bad for knives.

• Wood handles may dry out over time and exposure to water. Simply treat them  with some food safe wax.

STORING

• Protect the edge for your safety and to avoid edge damage. A simple blade cover  will do the trick if you keep knives in a drawer or in a travel case.

• The convenient wall magnet made with wood is a great way to show off your knives.  Be sure to put it back spine first, then roll it onto the blade face. This will keep the  edge from contacting the wood first.

• The good ol’ counter top block can keep knives at the ready and protected, so  can drawer inserts. Whatever the method, it should keep the edge from touching  anything else.

Stunning/ work of art

"Absolutely beautiful, looks exactly like the pictures. thin but not brittle, deadly sharp, no signs of rust. Haven't sharpened it yet to speak of how it takes an edge, but my diamond honing works great for keeping it in top shape 210mm is my preferred length. Just short enough to be a good all around utility"

Great Knife for the Price

"Really love this Nigara VG10 knife. The Bubinga handle looks and feels great too. The bevel out of the box was perfect too. They have great craftsman at Nigara Hamono for sure. Definitely my every day knife now. Also thumbs up to Knifewear for the speedy shipping. Knife was packaged very safely also."

Buy this knife

"You will love this knife. The front edge is swept up the perfect amount to allow for a rolling or rocking style cut, but not too much as to have wasted space on the blade. The kiritsuke shape is great for your fingers when utilizing a rolling technique and it looks super cool. The back edge of the knife isn't too curved, which works great for chopping or push cutting. The knife as a whole has excellent balance and I love the real wood in the handle. The octagon shape of the handle provides an ideal grip for either left or right handed users. The price is hard to beat. I don't think you'll find a better knife at a better price point."

Amazing Knife!

"Granted this is our first Japanese knife, but the sharpness, the aesthetic, the weight distribution is everything we could have wanted and more. A perfect all around knife that makes us feel like we’re better at cooking than we probably are!"

Incredible knife

"This knife is so nice to use. This was my wife and my first real knife purchase, up to this point we've used cheap bigbox knives, and wow what a difference this makes! Cutting veggies and meats is so easy, and it's so comfortable to use on a regular basis. Highly recommend!"

This is my wife's knife.

"This is my wife's knife. Her favorite vegetable slicer. Slices with ease and precision."

Excellent knife,

"All around excellent quality knife. Light enough to not be cumbersome but still feels sturdy and strong. It has an excellent edge and the blade details are gorgeous to boot. The handle is simple but beautiful and is a comfortable fit for my hands (women's large). This is now among the top 3 knives I own, and currently my favorite to use every day. I'll mark this under KnifeNerd/Enthusiast because I haven't had the chance to use it at work yet, but I do intend to put it to the test."
