About the Shape This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.

About Shizu Gen - Shizu Hamono is a relatively “new” knife maker, established in 1959 in Seki by Masami Horibe, he grew in Seki city, the city of blacksmiths, and naturally became a craftsman. Producing a stable Kuro-uchi finish on stainless steel was challenging, so they tackled it head-on with the goal of producing “Real Kuro-uchi”(meaning no coats or dyes) knives to achieve high performance with classic beauty and ease of care. After 29 months of research and development, they finally found the technique to create a real kuro-uchi finish on stainless steel.

VG10 Stainless steel makes these knives super sharp, reliable, and easy to care for while the pakkawood handles are elegant and rugged.

New knife for a birthday gift

"I thought I was ordering the larger knife. I couldn’t tell on line. When it arrived in Texas for my son’s birthday it turned out to be the shorter knife."

😍

"Just received my new petty knife. It matches my 240mm Gyuto which is my every day prep knife at work. Super clean look, great feel and holds it's edge well even in a professional kitchen. The petty is the perfect size for small tasks and was even great for deboning 15kg of chicken thighs yesterday. Highly recommend."

A beautiful knife with a nice edge

"Bought this for my mom. She started with the ko-bunka in the same line and she loved it and wanted to expand her collection from one Japanese knife to two!! Nice and small and versatile and she's very happy with them and easy to maintain and seem to be holding an edge very well!!"

Tyce K. (5/5)

Excellent knife, stays sharp

"Great knife, arrived sharp and has kept its edge well after 6 months of use. Mainly used to do bar prep work (cutting limes, lemons, oranges, jalapenos) full time for a very high volume bar. Take care of it and it will take care of you, everyone who has used it has been amazed by the quality and cut."

Great little knife!

"Went into the garage sale looking for the ko-bunka version of this knife, but found this one. Nice suble damascus finish and very sharp. the D-shape handle takes a little getting used to but comfortable none the less. A testament to its durability, this was a retired and refurbished tester knife and was razor sharp and looked as good as new despite having likely been used and sharpened several times. If the rest of the line ever come back in stock I'll be buying another shape for sure!"

"I LOVE my paring knife! A beautiful streamline mini version of our chef's knife. Couldn't ask for a better pair of knives. It'll be nice to add to our collection... XOXO"
