Get the knowledge you need to expertly prepare chicken at home. 

One of our favourite knife styles is the honesuki or Japanese poultry knife. If you enjoy making  kebabs or just want to learn how to break down a chicken to make chicken and waffles, a honesuki, combined with the knowledge of how to use it, is a great addition to your arsenal.

For $150, you will receive two chickens from a local, sustainable butcher to learn on and a $75 credit to you in-store towards your very own honesuki or boning knife. One of our staff will teach you how to break down the birds in preparation for two recipes: buttermilk fried chicken and boneless for skewering, which you will then finish preparing at home.

This is a very small class with a lot of one-on-one learning so space is extremely limited. Halal chicken options are available by request.

Unfortunately, we cannot allow minors in our classes.

Excellent class, time well spent

"I watched the videos produced by knifewear online and it covered the basics, this class provides a much more detailed experience. A selection of Honesuki knives were provided for each of the participants to try, and a detailed explanation of the different knives was given. The Chicken cutting itself was great because the instructions were clear and well thought out. the basic cuts were explained but then more details were given about the smaller cuts and what they are typically used for. I had never heard of a popes nose... The instructor was very patient and helpful demonstrating the cuts and helping each of the students as they had questions. If you are even remotely interested in this or know of a friend or loved one who are interested this is a great learning treat for yourself or gift for someone special."

Great Class - Would Recommend!

"Fantastic class! I would definitely recommend to individuals or couples to take. Don’t have to be a trained chef to take this class. The instructors do a great job walking you through step by step and ensure everyone is looked after. Fantastic skill to learn, I’m so happy I took the class. They also provide a range of knives to test so you can get a feel for a couple different ones throughout the process to help if you’re interested in buying a Honesuki. Plus you get to take home some butchered chicken along with some recipes!"

Cut chicken like a pro!

"I loved this class! We were taught two different ways to cut a chicken, French and Japanese. The honesuki is a unknown knife to me, it was good to get a feel for it and appreciate how effective it is. You go home with two whole chickens, 75$ toward a sweet knife and a great recipe! Can not go wrong."

Will you be offering this class again soon in Calgary?
Hi Avery, we will be offering the Honesuki Classes again in the New Year. Due to the busy nature of December and the Holidays, we don't run our classes during this time, but we will post the available dates for classes in the next few weeks, so keep an eye on our website! Matt

Hey there, you totally can! Just let us know when you place the order and we can either ship it to you, or you can come to pick it up. If you like, you can come down to the store and purchase the class there, and see if you want to upgrade you knife! - Ellie
Me and my girlfriend are planning to go to a class soon. Since we're gonna be living in the same household, it'll be a bit redundant to get the same knife. Would it be possible to maybe have the cost of the second knife be reduced from the whole price or be put into credit into another knife?
