"“Holy f**k!!!”, was my first impression. I have quite a few knives in my collection but this one stands out above them all. The fit and finish is the best of any knife I’ve seen. The texture of the cladding is amazing and photos don’t do it justice. The layers of copper, brass and steel all reflect light a bit differently and make this knife a true work of art. In terms of performance, it cuts like a heavy single bevel yanagiba but has the versatility to be the one knife to rule them all. Using a light hand and pull cuts, the weight of the blade slides effortlessly through just about everything. Precision cuts are no problem and it’s thick and durable enough to dice up a big yam without worrying about how delicate the blade is. The v-toku2 core steel performs like aogami super but is much more resistant to corrosion and staining. It doesn’t tarnish your onions immediately like other high carbon steels and is almost as user friendly as stainless, but not quite. I hesitated on buying this knife at first because of the price. It’s more expensive than a Fujiwara Denka or an Itsuo Doi, but it out performs both in it’s own way. Thanks Knifewear!"
