Get the knowledge you need to expertly prepare chicken at home. 

One of our favourite knife styles is the honesuki or Japanese poultry knife. If you enjoy making  kebabs or just want to learn how to break down a chicken to make chicken and waffles, a honesuki, combined with the knowledge of how to use it, is a great addition to your arsenal.

For $150, you will receive two chickens from a local, sustainable butcher to learn on and a $75 credit to you in-store towards your very own honesuki or boning knife. One of our staff will teach you how to break down the birds in preparation for two recipes: buttermilk fried chicken and boneless for skewering, which you will then finish preparing at home.

This is a very small class with a lot of one-on-one learning so space is extremely limited. Halal chicken options are available by request.

Unfortunately, we cannot allow minors in our classes.

Do you already have a Honesuki? You can use the credit from the included knife towards anything else in the store.

"I bought my husband this class as an anniversary gift and he really enjoyed it. The class was small and the teacher, Robert, was great and was able to answer all of his questions. My husband - who loves cooking - came away from it more confident in his knife skills. The class is also great value, as you get to take the chicken home, and get both a credit and a discount on a knife purchase with it. They did not try to upsell us on the knife either, and my husband enjoyed it enough to look into other classes there."

Hello, Yes we will be opening up spring slots in the next few weeks. We will likely have four spots on the last Saturday of the month. We would be happy to add you and your partner to a waitlist if you would like. Colleen
How often is the class offered? Is there a waiting list? We've missed the current Ottawa session and will definitely be watching for further opportunities.
Hi there! The Ottawa shop offers the Honesuki Skills class on the last Saturday of every month (with the exception of December where we suspend classes for the holiday season). We are currently sold out for our October and November classes. We will open up registration for classes in the new year towards the end of December!
