Get the knowledge you need to expertly prepare chicken at home. 

One of our favourite knife styles is the honesuki or Japanese poultry knife. If you enjoy making  kebabs or just want to learn how to break down a chicken to make chicken and waffles, a honesuki, combined with the knowledge of how to use it, is a great addition to your arsenal.

For $150, you will receive two chickens from a local, sustainable butcher to learn on and a $75 credit to you in-store towards your very own honesuki or boning knife. One of our staff will teach you how to break down the birds in preparation for two recipes: buttermilk fried chicken and boneless for skewering, which you will then finish preparing at home.

This is a very small class with a lot of one-on-one learning so space is extremely limited. Halal chicken options are available by request.

Unfortunately, we cannot allow minors in our classes.

"Awesome , informative and fun! Serious but with good banter. We came from out of town, late ferry, city traffic delays etc. 10 min late. Walked in to Knifewear Vancouver and everyone was relaxed and welcoming. Shout out to Sam& Ryan for their professional ease and knowledge! Good fundamentals, but missing promised yakitori content

"I took the chicken butchery class expecting to learn how to break down a chicken specifically for both buttermilk fried chicken and yakitori, as described in the class overview. While the class was well run once it got going and the instructor (Liam) was excellent—knowledgeable, patient, and great to learn from—the actual content focused almost entirely on butchery for buttermilk fried chicken. Yakitori was only briefly mentioned, and aside from identifying the chicken oyster, we didn’t go into any of the traditional yakitori cuts or techniques. This was disappointing, as the class description explicitly states that we would be breaking down the birds in preparation for yakitori. I was hoping to learn about additional yakitori-specific cuts and how a honesuki is used for that style of breakdown, but that portion never really happened. Additionally, the class started about 20 minutes late, which was frustrating given the short duration and small class format. Communication leading up to the class was also limited—I had to call the store myself to get basic details about the class, which I wasn’t expecting for a paid experience at this price point. Overall, the fundamentals of chicken butchery were solid and the small class size was a plus, but the experience didn’t fully match what was advertised. I would rate it higher if the yakitori portion were covered in meaningful detail and if communication and organization were improved."

Excellent class! Instruction by Francis

"Excellent class! Instruction by Francis was great. Francis was personable, relaxed and a great communicator. To chat with Francis was wonderful as he has many points and tricks from his experience with knives and in the industry. I know Francis is the assistance manager of the Vancouver store. When watching him, as I pop in often, it appears that he has the respect of the staff. In addition, I believe that Francis cares for his staff which is evident in the great, relaxed vibe of the store. Great store! Thanks Francis and gang!"
