The Haruyuki Kokuto is forged from a modern high-tech stainless steel called Ginsan, which was specially designed to cut much like traditional Japanese high-carbon steel without being a rusty pain in the butt! You get the joy of cutting with a traditional Japanese knife but none of the fussy maintenance. Truly, the best of both worlds.
The lighter Japanese ‘wa handle’ gives the knife a forward balance that allows it to fall through food effortlessly and do more of the work for you, which I absolutely love. Combined with a rustic ‘nashiji’ finish that looks like the skin of an Asian pear, it’s a traditionally elegant blade.

About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.

"I went in looking for my first good chefs knife/gyuto. I have been using an entry level German blade that a roommate left behind 15+ years ago. I was pretty sure I wanted a western handle, a 210 blade length, and a hammered finish. I had a great discussion with one of the sales people there and eventually settled on this 240 gyuto with a Japanese handle. I ended up liking the balance the Japanese handle gave the knife, I loved the fit and finish of this knife and I was offered an early Black Friday discount on the 240 mm that I couldn’t refuse. This may not be a laser of a Japanese knife but it still cuts/slices beautifully and I don’t have to baby it. I find you quickly get used to the Japanese handle and balance of the blade. The 240 length I am still getting used to, or at least still being careful with since that has taken me a bit to get used to. I do find the additional length very handy though and do not for a second regret it."
"Very well constructed, very light and comfortable in the hand. First couple of times using it was a bit scary due to the size but got used to it very quickly. This knife cuts through thick raw carrot with aplomb, can fine slice mushrooms without accordion and finely chop herbs without crushing them. Took me about week to get used it, now I pull out my old chefs knife, laugh at it, and put it away. Very happy with purchase and got it on sale with their 240mm Gyuto sale last month. Can't wait to get a a few more styles form the Haruyuki line!"
"This is my first Japanese knife. My current knives are all German made. This knife is amazing! I order it from the website during their 240 mm Gyuto sale. It arrived ahead of schedule with no hassles. First, the packaging looked great. I appreciated the note from Knifewear inside the box too. This knife is beautiful in person. The fit and finish is top notch. The handle is very comfortable and the slight weight bias towards the blade allows the knife to slice and chop effortlessly.
