Excellent Knife
"This knife is everything I've wanted in a knife. It's beautiful(more so in person), well crafted, sharp and a pleasure to use. It took a bit of getting used to coming from a shun premier 7" santoku, but after a couple of weeks the 9.5" length is much better for me. The knife feels great to use in my hand. The wa handle is very comfortable and even though knife may look heavy at a glance it is very light for the size as well as having a nice balance to it. Performance wise It's great. Food release is good, very sharp out of the box and have gotten it sharper with regular honing. Tip work is a lot of fun due to the k-tip design. Makes fine work a breeze to do. Far superior compared to a santoku. The blade itself is not too thin and not too thick so It strikes a nice balance between a laser and workhorse. I can do some of the tougher jobs with this knife that I wouldn't want to do with a thinner blade. Takes a bit more of a beating. The decently flat profile of the knife lends itself well to push cutting which i prefer. It really is a nice balance between a kiritsuke and gyuto. Best of both worlds. As for the design, what can I say? It's a work of art. Sometimes I'll find myself pulling it out of my knife block just to admire the design every now and again. The tsuchime/kurouchi finish is very unique and gives the knife that extra je ne sais quoi. I like the fact that the handle is a simple walnut as it does not take away from the beauty of the blade. It has a nice harmony to it. My only complaint is that the blade does smell a bit due to the kurouchi finish, but it has dissipated over time. I dont find that it has affected the taste of the food so It's a minor complaint. Overall an excellent knife that I would recommend to anyone. Well worth the money. Knifewear customer service was also excellent in helping me through a shipping issue with Canada Post. The service was prompt, precise and considerate. Had it not been for the quick thinking of customer support, I would not have ended up receiving this knife a at all. It's much appreciated. Shout out to Brenda for helping me!! You rock!"
