About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi-purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.

A note about measurements: Handmade Japanese knives can vary in their dimensions, so these measurements are only an example.

Stainless steel is super handy because it doesn’t rust or stain easily like carbon steel. That said, remember it is stain-less, not stain-never. While it is much easier to care for than high-carbon steel, it does benefit from proper use: use it, wash it, dry it and put it away. Always avoid the dishwasher!

USE

• Only cut food you can bite through with this knife. Hard foods can chip the blade. No olive pits, bones,  lobster shells, woody stems or parmesan rinds. Cutting frozen food is especially bad  because the cold will make hard steel even more brittle. If you wouldn’t chew it with  your own teeth, don’t cut it.

• Your cutting surface is the biggest culprit of dulling your knife. Use wood. End  grain wood is especially good. Plastic can be fine too, but certainly not glass,  granite or bamboo

• The edge of your knife works best sliding forwards or backwards. Scraping the  knife edge sideways will dull or damage the edge. Instead, use the spine of the knife to move foods across the cutting board. Do not twist the edge or pry with the edge, this is the worst screwdriver you ever bought and these motions will certainly  damage the edge. Listen to the knife! If you can hear the edge making a “tink”  sound on the cutting board, change what you are doing.

CLEANING

• After use, wash the knife by hand with regular dish soap, rinse with hot water  and dry by hand immediately. Dishwashers are very bad for knives.

• Wood handles may dry out over time and exposure to water. Simply treat them  with some food safe wax.

STORING

• Protect the edge for your safety and to avoid edge damage. A simple blade cover  will do the trick if you keep knives in a drawer or in a travel case.

• The convenient wall magnet made with wood is a great way to show off your knives.  Be sure to put it back spine first, then roll it onto the blade face. This will keep the  edge from contacting the wood first.

• The good ol’ counter top block can keep knives at the ready and protected, so  can drawer inserts. Whatever the method, it should keep the edge from touching  anything else.

Great knife

"Received last night and felt like a kid on Christmas morning. I also ordered a blade guard that was too short without knowing it would be too short, and they sent me the correct size with no charge! Truly great service! The knife is just amazing; it glides through everything effortlessly and feels amazing. The shorter length makes it easy to use."

Great Knife

"This knife is awesome. Complete laser but stiff stiff enough so it doesn’t feel fragile. Love the knife!"

Christopher T. (5/5)

Excellent Knife

"Excellent knife, very thin edge, excellent edge retention."

Rakesh J. (5/5)

Really nice knife that is

"Really nice knife that is very thin but sturdy that just falls through veg. Perfect length and feels great in the hand. Awesome finish. Love the sweeping tip."

Jay L. (5/5)

Wow

"This has the best fit and finish I have ever seen on a knife. Flawless. The tip is quite thin making horizontal cuts a breeze and the out of the box edge is by far the best of any knife I've purchased. If you're into high precision knives the Kotetsu line will never steer you wrong."

One of the best of the best!

"I’ve been hunting for the 195mm size Kotetsu Gyuto for a while now, and when it came back in stock, I made it my priority to grab it while I could. Such a versatile length, being not too short but not too long, and the curvature towards the tip just compliments a slicing motion. I loved it so much, I even threw a custom handle on it. Beautiful. Shibata-san never disappoints, the edge on this bad boy is just that sharp! Thank you staff at Knifewear!"

Exquisite knife

"I waited for some time to decide what to purchase as an example of Shibata-san’s work, and finally decided on the Battleship Gyuto. First, I wanted one of his Kotetsu linens he really pushes R2 to it’s limits. Extremely thin grinds and extremely hard heat treat make this an effortless blade. However, you have to be equally mindful with it while cutting, both to protect the blade and to protect yourself! I really have very few other blades that cut quite as effortlessly. The finish on both the blade and handle are top notch. The finish on the cladding does help with food release and is fully stainless, so I do use this on veg that are tougher on my more reactive blades. The tip shape is both quite unusual for the line and handy on more intricate work, like garlic mincing. The length and shape fills a nice niche in my knife collection. Highly recommended."

Unique and sharp

"This knife shape is quite unique (did some reading in Shibata-san’s website, on why it is called the Koutetsu), one of the reasons why I added it to my collection. The knife feels good in the hand, nice weight and balance. Of course, it is sharp, unsurprisingly."

Shibata Battleship is the perfect

"Shibata Battleship is the perfect size K-Tip for your slicing needs. Ultra thin and super sharp right out of the box."

James M. (5/5)

Shibata Koutetsus are the definition of lasers

"There's a reason the Battleship always sells out - it's awesome. At 195 it's long enough for most tasks, but still short enough to be nimble. R2 steel is excellent and this is a true laser. One word of warning (or several words really), these are delicate knives. Watch that tip and avoid board torque at all costs. That said, it's a price I'm willing to pay for the performance."
