This is my next knife. I believe everyone needs a nakiri, but more importantly everyone needs a Fujiwara knife, so why not make it a 150mm nakiri? Nimble, lightweight and perfectly balanced, this is the veggie prep knife for everyone from mom to seasoned line cooks. The notch in the handle holds onto you as much as you hold onto it. About the shape - A Nakiri is a vegetable knife. Under utilized in the Western kitchen, the Nakiri’s flat blade is meant for the push/pull chopping of vegetables. Since the entire flat edge of the knife kisses the cutting board at once, you won't be turning the vegetable into an accordion. Accordion vegetables are still connected like a paper doll after you're “done” cutting them. To truly understand the awesomeness of a Nakiri we recommend making onion soup your first night with the knife. The ease of chopping will blow you away.
About the Fujiwara Maboroshi - Swordsmith Teruyasu Fujiwara IV has named these knives Maboroshi no Meito, “Visionary Sword Celebrated in Victory” — a bold claim, but one that is deserved. People regularly gasp when they slice a tomato or potato with Fujiwara-san’s knives in the shop. The knives of Teruyasu Fujiwara are real darlings of Knifewear. These blades of his are remarkable. The quality of the sharpness is nearly unparalleled and the edge retention blows my mind. Professional chefs generally hold a knife by pinching the blade with the thumb and forefinger. The unique finger notch cut from the choil makes this grip even easier and more comfortable. The kanji on the knife blade 藤原照康作 reads “Fujiwara Teruyasu Saku” (Made by Teruyasu Fujiwara).

"I'm very fond of the blade itself. It arrived sharp, looks wonderful and feels great in the hands. It has a feeling of authenticity and personality that is hard to replicate from factory produced knives. The handle: It may sound like a complaint, but it isn't really - the handle reveals some of the lack of attention to detail between this knife, and a masterfully hand-forged knife. The handle isn't fit completely flush with the tang. Also, there are nicks and chips in the handle that gives me the impression this is a rushed, kind of mass-produced type of knife that doesn't require precise attention to the SMALLER details. This, in a way, gives a sense of individuality to the knife, and has a personality of its own. That's where I say there is a "grass-rootsy" feel to it. This knife fits nicely in the hand, has outstanding balance, and looks great. Thus, a 4-star review for a knife that is worth the price tag."

"At first I thought my carrots had gone soft and were spoiled. The knife simply fell through them and it was only when I checked them later I realized they were still firm and solid. The blade made it so easy to cut them. Also the ergonomics of that notch in the blade near the handle make for a very balanced cutting experience. I have not had to sharpen or even hone the blade yet so I cannot give feedback about that. However, any smith capable of making such a perfectly balanced cutting implement will have considered the sharpening of same and I have no concerns on that score. An excellent, lifelong, companion of a blade! Thanks."
