"very smooth and sharp, the most smooth knife I’ve ever used. First Fujisawa knife for me, after using it I’m sure it will not be the last. It’s a heavy knife and that’s one of the reasons I got it, love the weight, helps cutting through things easier. However the edge is very very brittle, think twice before you take it to a kitchen like I do. Got it together with a Naniwa pro 1000 grit stone, I give it a quick 1-minute sharpening every day, still works like brand new, so not too hard to take care of (it’s a $800 knife I’m sure you will take good care of it XD). Overall a very decent knife!"
