unique and beautiful knife
"Learning to work with white steel for the first time. find that it oxidizes very easily, so my habit is to always be removing stains. Love the transition of the finish from spine to edge. I knew I was getting a knife with a thicker spine, and notice the handle has a bit of heft too. width of spine tends to split/break food even though edge is sharp and through. yet weight and balance on this knife are still there for great performance. simple tasks like cutting herbs are a breeze. blade height is just enough for my big hands and long fingers. super sharp out of the box, dulled a little quickly, got an edge back super fast. I find edge retention improves for me over time, which I expect here. Either way seems like a great value for a knife with attributes you find in pricier pieces."
