About Sadamasa Kajiya - Opened in 1920, Sadamasa is located in the beautiful mountainous area of Chino city, Nagano. Now, the young fourth-generation Yusuke Obi forges, polishes, and sharpens the blades to perfection. His knives are beautifully polished and sharpened, starting with a thick spine that tapers to a nice thin edge. This allows them to glide through food like nothing without feeling too delicate. A nice toothy edge lets them bite into tough vegetable skins effortlessly.

These blades are forged from Aogami #2 with stainless cladding, making them high-performance but relatively low maintenance. The burnt chestnut and water buffalo horn handle is the perfect ribbon on a stunning package.

About the Shape - Inspired by the profile of a traditional European chef knife and badass tip of a Kiritsuke (Traditionally a single bevel knife), double bevel Kiritsukes are a multi purpose knife with a slight meat cutting bias. If you want one knife to do it all, and look cooler than your buddy, this is your knife. For the at-home or professional cook, we recommend a Kiritsuke which measures between 210mm and 240mm long.

Great all around Kitchen knife!

"First time owning a Kiritsuke knife and I’ve used it at work for a week, so far it’s been good. The Kiritsuke feels incredibly delicate compared to my other knives, but it really inspires confidence in its precision. It’s my first experience also with thin Japanese blades like this, so I was a bit intimidated. However, the ease which it passes through the food is incredible. After a single use it’s developing a cool patina, so I’m not sure if I need to be more diligent about wiping off during use. All in all I’m blown away and really happy with it. Looking forward to many future uses. All in all I’m blown away"
