About the Tadafusa Nashiji - The Tadafusa Nashiji Western sports an Aogami No.2 core and stainless nashiji finish on a curved wooden western handle, making for a great combination. For us this is a classic knife that we see a few times a year, and we are always thrilled to have them in the shops.
Tadafusa is run by Tadayuki Sone — his grandfather, Torasaburo Sone, founded Tadafusa in Sanjo way back in 1948. Sanjo has been a blacksmithing epicentre for several hundred years, and it’s also home to some of the most well-respected sake distilleries and winter sports resorts.
Unsurprisingly, Sone-san has a very strong sense of civic pride. He’s dedicated to keeping all of their production in Sanjo to create local employment opportunities. This extends not just to his generation; Sone-san wants Tadafusa to stay in Sanjo so the next generation can inherit this tradition and improve upon their craft.
As president and head blacksmith, Sone-san leads a team of highly trained blacksmiths who churn out affordable, hand-forged blades without ever compromising on quality.
About the Shape - This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.

"Really solid knife. Cuts well, shape is really nice in the hand. Not the best Japanese knife I have used but really solid for sure."
"Beautiful little knife, nice finish. Sharp out of box, the handle is nice but seemed very dry so I just added some oil to it. A little small for most tasks so definitely suited to smaller/ finer work."
"Carved up a jalapeño with it."
"This is my first carbon blended knife and I am very impressed with how much longer it stays sharp. I have smaller hands and the weight feels nice but not heavy, and well balanced."
"This is a fantastic knife. Comfortable in the hand, perfect size for small tasks like cleaning vegetables, minor meat and fish work and other prep. Sharp like mad, well made and very utilitarian. Extremely happy with this knife."
"I was surprised by the "unfinished" feel of the handle - it is awesome! I think over time it will take up a little oil polishing. Great little blade! ... makes me wonder about a 125 mm ... Here is a photo with one of its new friends!"
"Canadian chef in Australia chooses his knives specially from knifewear and has his family pick up and send to him! He loves the choices and the quality. His collection is growing. This new knife hasn’t arrived yet but he will love it. He’s also very excited to get his Higo knives - one for him and the others are gifts for his friends. The cutting board is beautiful and perfect for party cheese boards ."
