"I love the sweeping shape to this gyuto. The handle is lightweight, so the weight is forward despite feeling very thin, especially towards the tip. The fit and finish are very nice with smooth choil and spine and a very even migaki finish. The sharpness is the standout feature though, bites into all different kinds of ingredients smoothly and reliably while retaining that edge with only occasional light honing. I’m sure it’ll need sharpening eventually but not for a while."
