About Haruyuki Shiso -

Aogami Super is the king of knife steel—super easy to sharpen, gets a laser beam edge, cuts like silk, and isn’t as fussy as other carbon steels. It’s then clad in stainless steel, so only the edge needs to be kept dry to avoid rusting. Brilliant. If that wasn’t enough, they’ve given it this black ‘kurouchi’ finish, which makes for a seriously badass blade. The two-tone handle compliments the overall look of the blade so well and really makes this a knife worth showing off!

Designed for kitchen success, Haruyuki knives are beloved among professionals and home cooks alike for their reliable, high-performance blades. Haruyuki combines ancient Japanese tradition with efficient modern technology: blades are forged by machine for unparalleled precision, consistency, and affordability. Skilled artisans then complete the remaining steps by hand, from polishing and sharpening the blade to affixing its handle. The resulting knives have the feel and aesthetics of a traditional handmade knife while being more accessible to young cooks and folks starting their knife collection.

About the Shape - This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.

Carbon steel gets crazy sharp and holds an edge very well, but can rust. Stainless steel has the benefit of being less prone to rust but isn’t quite as sharp. Luckily, Japan has the solution. They make lots of kitchen knives by sandwiching 3 layers of steel together. In the case of kitchen knives the softer, outside layer is stainless and the hard core is carbon steel. The best of both worlds, super sharp — with low hassle. These are some of the most popular knives we sell. The exposed core steel can rust, and you have to wipe it dry to keep that from happening, but this is only a small part of the knife. Over time, the edge will oxidize from from shiny to a dull grey, this oxide layer slows down rust.

USE

• Only cut food you can bite through with this knife. Hard foods can chip the blade. No olive pits, bones,  lobster shells, woody stems or parmesan rinds. Cutting frozen food is especially bad  because the cold will make hard steel even more brittle. If you wouldn’t chew it with  your own teeth, don’t cut it.

• Your cutting surface is the biggest culprit of dulling your knife. Use wood. End  grain wood is especially good. Plastic can be fine too, but certainly not glass,  granite or bamboo

• The edge of your knife works best sliding forwards or backwards. Scraping the  knife edge sideways will dull or damage the edge. Instead, use the spine of the knife to move foods across the cutting board. Do not twist the edge or pry with the edge, this is the worst screwdriver you ever bought and these motions will certainly  damage the edge. Listen to the knife! If you can hear the edge making a “tink”  sound on the cutting board, change what you are doing.

CLEANING

• After use, wash the knife by hand with regular dish soap, rinse with hot water  and dry by hand immediately. Dishwashers are very bad for knives.

• Wood handles may dry out over time and exposure to water. Simply treat them  with some food safe mineral oil or beeswax.

• If you see orange rust, remove it. The scrubby side of a sponge can do the trick.  If it’s still not coming off try baking soda and water mixed into a paste or a product  called Barkeeper’s Friend.

STORING

• Protect the edge; for your safety and to avoid edge damage. A simple blade cover  will do the trick if you keep knives in a drawer or travel case.

• A convenient wall magnet made with wood is a great way to show off your knives.  Be sure to put it back spine first, then roll it onto the blade face. This will keep the  edge from contacting the wood first.

• The good-ol’ counter top block can keep knives at the ready and protected. So can  drawer inserts. Whatever the method, keep the edge from touching anything else.

Should have bought it sooner…

"My new Haruyuki Shiso is suddenly my go to for so many tasks on my board. I’m finding it in my a hand more frequently than my chef knife. Super nimble, extremely sharp, and effortless to use. No idea why I waited so long to pick one up, and this one is a great value as well !!"

Bought 3 unbelievable knives, cutting

"Bought 3 unbelievable knives, cutting board and associated accessories over a couple of visits to the shop. The people are fantastic, knowledgeable and patient. I learned more in one visit than I ever imagined. You need to go there. I know I will be."

Haruyuki Shiso Petty

"While visiting family, in Edmonton, I stopped by the Whyte ave. store to check out a few things "in person", since we don't have a store in Kingston. I held and handled 3-4 petty knives before selecting the Haruyuki Shiso. The staff were excellent. Very nice blade shape and handle, I do really like the dark Kurochi finish. The length is perfect for many jobs. The blade is easy to sharpen on the wet stone and I should have picked up one of the honing rods for little tune-ups."

Excellent Knife Was lucky enough

"Excellent Knife Was lucky enough to find a pretty unique tri-tone handle among the options available. Although advertised as a petty, the length is also perfectly capable of handling any cutting task cooking for 1-2 people. Lightweight and holds an edge extremely well. Steep price tag, but a great long term investment (with proper maintenance)."

Love this knife! Sharp and

"Love this knife! Sharp and perfect size for small jobs. Also as a hobby I make and replace knife handles for myself and friends. This is what I did for my Haruyuki Shiso Petty. Looks incredibly sharp! Pun intended"

David N. (5/5)

Very functional and aesthetically pleasing

"Very functional and aesthetically pleasing knife. Sharp right out of the box and got down to business right away. Love the carbon steel and wooden handle combo at a great price point."

Terence W. (5/5)

Great petty for small tasks.

"After using this petty for a month at my job I’ve fell in love with it. The 135mm was just the right length petty I was looking for. It was nice and sharp out of the box (I did get it MUCH sharper on a whetstone). It should go without saying, but the aogami super blue takes a great edge and holds it well. I have no complaints about this knife. As expected It develops a nice patina on the exposed carbon steel, a look that I love."

Tyler N. (5/5)

Incredible knife, perfect for small

"Incredible knife, perfect for small butchery and vegetable work, holds edge very well, very light, and absolutely love the feel of the handle"

Noam R. (5/5)

a not so "petty" knife

"LOVE. Exactly what I needed in my quiver. Nimble enough for any job small or big and super versatile. Easy to sharpen but holds a wicked edge, blade length is right on point. Super comfortable in my hand. Would highly recommend."
