About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.
About Hatsukokoro Kumokage -Hatsukokoro works with a wide variety of artisans in their local area, from blacksmiths to knife sharpeners and handle makers. By working with folks who have mastered their craft, each aspect of the knife is carefully curated. Their Kumokage line offers the high-end performance and good looks that Japanese carbon steel is known for, at an incredibly agreeable price. With a little extra care, blue carbon steel gets incredibly sharp and keeps a spectacular edge. The dark wood handle gives it an elegant look, while the octagon shape is exceedingly comfortable to hold while you cut.

"I use this knife every day at work in my sushi restaurant. I love the design and how easy it is to use."
"Fantastic every usage knife right here, from portioning fish to carving whole legs of protein and destroying any vegetable you can think of. The carbon type makes it very sharp and needs minimal sharpening other than the odd honing now and then. So far no chips yet! Worth every dollar"
"It's a work of art! That damascus is beautiful, and it cuts like a laser. It's my first 240mm and I actually love the size over my 210mm"
"What makes this Gyuto a Great Knife is the weight (a little heavy) and balance in my hand. Very controllable! Long & sharp to do prep work for days. And being a high carbon steel, some beautiful flaws have revealed themselves. The Japanese call it ‘Wabi Sabi’. I wish I had it when I worked in restaurants."
"I bought the 150mm petty from this line last year. So impressed with it that I added the Gyuoto recently. It is a rugged, yet beautiful knife. Decent edge out of the box, needing just a little touch up to achieve it's potential. I did remove the lacquer finish it came with so it will start to develop that lovely patina. Highly recommend this knife!"
"Love my new HATSUKOKORO KUMOKAGE AOGAMI KUROUCHI DAMASCUS GYUTO 240MM. Everyone is super knowledgeable here and they help you make the right purchase."
"Love this knife. It’s very light for its size. It seems to be holding its edge for a very long time. Thank you to the Toronto team for bringing in a few knives from the warehouse for me to see in person and get a feel for. I fell in love with this knife at first sight. You guys are the best!"
"This was the third of my new collection, have a hammer tone santoku. This was the perfect compliment. The weight is perfect in my hand. Stays nice and sharp, beautiful knife yet simple. Truely a great bang for you buck also. Thank you to the staff at knifewear for helping me select it."
"Was looking for a sharp, durable gyuto for use at home and work. First time using, the tip bent significantly. Definitely not as durable as I would have liked."
"Xmas present for my son. Loves the knife. Great sales staff."
