This grit is great for starting a somewhat sharp edge and refining rougher edges. The texture is rough enough to cut steel quickly but smooth enough to give a shaving edge that can easily be polished on finer stones. A 1000 grit stone is an essential stone for any knife sharpener - and the Naniwa Professional series, is one of the best available.

When to use this stone:

  • Cuts steel quickly and no soaking is required, just splash and go.
  • Excellent for touching up western and hard-working Japanese knives that you want a stronger edge.
  • Not the ideal stone for knife thinning, the 1000 grit is a little hard, but possible to get a very nice finish with a bit of practice. To achieve a nice Kasumi finish the Knifewear 1000 grit stone is ideal.
  • If you believe in "Buy it once", this is the stone for you.

Always flatten your stone with a truing stone after sharpening.

Sharpening knives can be one of the most satisfying and fun skills to learn and do. Whether you’re an old hand at sharpening, or just starting out, we want to give you a few tips to help you get the most out of your water stones. If you have any questions about care or technique, please feel free to get in touch, our contact information is below.

Waterstone tips:

  • Use plenty of water. Periodically splash your stones with water as you use them to prevent the stone from plugging up with residue.
  • Some stones require soaking in water for about 20 minutes prior to use, others only require a splash of water while sharpening. Knifewear brand stones tell you what they require on the package. A good way to tell which a stone requires is to splash it with water, if the stone immediately sucks up all the water on it, soak it. If it
    pools on top don’t soak it.
  • Stones take on steel residue with use. A small Nagura stone can help clean the surface like an eraser.
  • Use a truing stone to keep the stone surface flat. Softer stones might require this before every sharpening session. This will help you to maintain the correct angle for sharpening, which is critical for creating the best knife edge.
  • We suggest lightly beveling the edges of the stone with a truing stone to avoid cutting yourself, and to prevent chips from coming off.
  • In dry climates, certain stones can be vulnerable to cracking if they dry too quickly. To avoid this, wrap these stones in a damp tea towel and allow to dry more slowly. These include the Knifewear 4000 and 8000, as well as the Naniwa Professional series.

Important!

  • Do not keep stones in direct sunlight, extreme heat or cold
    (e.g. Inside a car in winter) and avoid dropping them.
  • Always wipe excess water off from the stone before storing.
  • Never ever use oil on a water stone. It will ruin it.

"I purchased this as part of a full set up, with a coarser stone, truing stone etc all from Naniwa. I have used it on 5 knives so far, all of which went from a very dull edge to being able to slice paper, cut cucumber slices less than 1mm thick, and making cutting a joy and much faster. I found the stones sizing and surface area great for small or larger knives. They have worn well, I have not needed to use the truing stone yet, evidencing a durable, high quality product. Absolute burrfection!"

"I always had a good collection of European knifes that I sent yearly to have sharpen and that I would maintain with a honing rod between sharpening. I recently decided to invest in Japanese knifes but I wanted to be able to sharpen them myself before. This 1000 stone is part of a trio 400-1000-3000 that I acquire recently. Since I do not have any previous experience with water stone I can not compare this stone to any other but it made it really easy to get a good edge on my knifes. Now to get a great edge I think I should attend a knife sharpening class . Once I have more confidence in my skills I will be looking at those gorgeous Japanese knifes."
