About the Shape - A Nakiri is a vegetable knife. Under utilized in the Western kitchen, the Nakiri’s flat blade is meant for the push/pull chopping of vegetables. Since the entire flat edge of the knife kisses the cutting board at once, you wont be turning the vegetable into an accordion. Accordion vegetables are still connected like a paper doll after you're “done” cutting them. To truly understand the awesomeness of a Nakiri we recommend making onion soup your first night with the knife. The ease of chopping will blow you away.
About Ryusen Fukakuryu KAI - Ryusen Hamono was founded in 1948 as a knife sharpening company. They worked with companies like Takefu Special Steel as early as the 1970s to develop high-quality knives made with stainless steel, at a time when most other knife makers were struggling to produce decent stainless steel knives. Now, they have expanded their collection of knives not only having sharpness and longevity in mind but with a sleek modern design.
The Fukakuryu KAI series brings stunning good looks and a 63-layer damascus blade forged from ATS-314 stainless steel. "I never owned a Nakiri and I probably don’t need one but once I used this one…. oh boy. What a joy this knife is. Sharp? Heck yeah. Extremely so. Light? Absolutely. It goes through leeks, tomatoes, peppers, onions and probably any vegetable you can think of. Fit and finish are first rate. Fantastic handle. Beautiful maple but also very ergonomic. Outstanding balance and it is a thing of beauty as well. Buy a sheath if you keep it in a drawer. I’m building my own magnetic countertop knife holder and I already made a leather sleeve for it. I highly recommend this knife. My next one will be the Ryusen Fukakuryu Sujihiki in 270mm."

"The blade shape of the Ryusen Fukakuryu nakiri looks amazing. The damascus finish is cool and the extended spine gives the knife a real badass 'anti-santoku' vibe. The blade is thin, very sharp and has good height; with a tiny bit of curve and a smooth cutting feel. The maple handle is octagonal faceted; that is tapered towards the blade. This taper makes it the best handle shape I've come across. I was open to a carbon steel knife but the handle feel and balance had me select this knife. Definitely worth trying the Ryusen Fukakuryu line knife for feel. And if you want a low maintenance (stainless steel) damascus finish knife; this would be an excellent choice."
