Services d'affûtage de couteaux

Vous pouvez apporter vos couteaux à l'un de nos emplacements : Calgary, Calgary Farmers’ Market, Edmonton, Ottawa, Toronto ou Vancouver. Nous pouvons les remettre en état en 24 à 72 heures, et nous vous appellerons dès qu'ils seront prêts ! Avant de nous apporter vos couteaux, veuillez bien les nettoyer et les protéger avec des protège-lames en plastique ou des matériaux jetables comme du papier journal.

50 % de tous les bénéfices de l'affûtage sont reversés à des œuvres de bienfaisance locales en tout temps.

Nous affûtons toutes les marques et tous les types de couteaux, à l'exception des couteaux dentelés (par exemple, les couteaux à pain) ou en céramique. Nous n'affûtons pas les épées ou autres armes.

Affûtage

Nous affûtons les couteaux à la main sur une série de pierres à eau. Pour les couteaux occidentaux, nous commençons avec une pierre à eau grain 250, puis nous affinons le tranchant avec un grain 1000. Pour les lames japonaises, nous continuons à affiner le tranchant avec des grains 2000, 3000, 5000, 8000, 10 000, et même parfois une pierre grain 12 000, selon le type d'acier et la fonction du couteau. Nous finissons tous les couteaux sur un strop en cuir avec de la rouge de bijoutier, pour nettoyer et polir le tranchant final. C'est ainsi que les couteaux sont affûtés à l'usine/atelier où ils sont fabriqués. À notre avis, c'est la meilleure façon de redonner à une lame son tranchant d'origine.

Chaque couteau est construit individuellement à partir de différents matériaux, donc chaque couteau nécessite une attention unique. Nous affûterons la plupart des lames occidentales à 22 degrés, les lames japonaises à 15 degrés, et les lames japonaises les plus fines/faites à la main à 11 degrés. Ce sont les directives que nous suivons pour ce qui, selon nous, donne le couteau le plus tranchant avec une excellente rétention du tranchant, mais nous sommes prêts à affûter selon les préférences personnelles.

Nous affûtons également les lames à un seul tranchant avec ou sans koba ou micro-tranchant. Personnellement, Kevin utilise son Yanagiba et son Miroshi sans koba pour un tranchant maximal, tandis que certaines personnes préféreront peut-être leur Deba avec un koba pour plus de résistance.

Réparations

Si votre couteau a été endommagé, nous pouvons vous aider ! Les réparations que nous effectuons comprennent le réalignement du profil du tranchant, la réparation des pointes cassées ou tordues, la réparation des éclats dans la lame et le rattachement ou le remplacement des manches japonais (wa). Veuillez prévoir un délai supplémentaire lorsque vous déposez votre couteau pour une réparation.

Quelle est la meilleure façon de transporter mes couteaux ?

Si vous les apportez au magasin, veuillez les apporter dans quelque chose qui peut être facilement désinfecté, comme des protège-lames en plastique. Le papier journal fonctionne aussi, car nous pouvons nous en débarrasser. Veuillez ne pas les apporter enveloppés dans des serviettes ou tout autre objet que nous ne pouvons pas jeter ou désinfecter facilement.

Comment envoyer des couteaux par la poste pour l'affûtage ?

Si vous êtes trop loin pour apporter vos couteaux en personne, il suffit de nous les expédier. Suivez ces instructions si vous envoyez vos couteaux par la poste.

À quelle fréquence les couteaux doivent-ils être réaffûtés ?

C'est une question impossible à répondre. Avec quelle force frappez-vous la planche à découper à chaque coupe et sur quel matériau coupez-vous ? De quel type d'acier le couteau est-il fait ? Êtes-vous un chef professionnel ou un cuisinier à domicile ? À quel point êtes-vous accro à un tranchant extrême ? À quelle fréquence le couteau est-il aiguisé ? Et comment le couteau est-il rangé ? Ce sont tous des facteurs qui affectent la rétention du tranchant.

La meilleure réponse est que, une fois que le couteau ne fonctionne plus comme vous le souhaitez, il est temps de l'aiguiser. Nous croyons en l'entretien périodique des couteaux, tout comme la plupart des gens croient au changement d'huile de leur voiture. Si vous ne savez pas ou ne voulez pas affûter les couteaux vous-même, apportez-les-nous.

Hi There, I just recieved my new Dalstrong 10.25 knife today, and wanted to get it oiled and sharpened. This is my first expensive knife, relatively speaking...Lol. I have heard alot about your service, and read all your reviews, can you help me out me out? Thanks, Lou
Hey Lou, we can totally help you out, out of the box, it should be pretty sharp, but if you are finding it lacking, bring it in and we can tune it up for you. Most of the Dalstrong knives are stainless steel, so you likely don't need to oil it. The big thing I'd recommend is a ceramic honing rod (https://knifewear.mom/products/ceramic-honing-rod-black), if you don't have one of these, you'll want to get one, as it'll help keep your edge super fine for much longer! - Ellie

Can you sharpen Tweezerman tweezers? If so, how long does it take and what is the cost?
Hey Judy, Odds are that we cannot sharpen the tweezers as we usually can't make them fit on our stones. You could always bring them in to one of our shops and we would happily take a look at the possibility of us being able to do them. We would let you know immediately whether or not this can be done .
