About the Shape - Shallots, garlic, herbs, itty bitty diced onion and tomato, beef tartare… none can stand up to the small but mighty Kamagata. The flatness along the edge and its height makes it ideal for chopping, and its flat-out adorable size makes it easy to wield for cooks of all sizes.
About Moritaka Ishime -Moritaka Hamono was founded in 1293 and have been producing high quality blades for 31 generations. I think they know what they’re doing by now. Five generations ago the family made the switch to producing only Hocho (kitchen knives).The knives made by the Moritaka family have a real classiness and beauty. This series of knives are known for a thinness which translates to fantastic sharpness. This finish is known as Ishime, Rock Surface, and was not used on kitchen knives before this series. This series is exclusive to Knifewear.

"This has swiftly become one of my top couple favorite knives. The kamagata sails through veggies with ease. I really appreciate the extra height of the blade for knuckle clearance over the cutting board while the shorter length is very nimble. The sharp point works great for pull slicing and piercing down into onions for dicing. The ishime finish on the blade offers a great non-slip texture for my fingers in a pinch grip."
"This is my first full carbon Knife after a couple weeks I am very happy with it. It is great for smaller veg and doing super fine slicing. I have been keeping it dry and have used some knife oil, no rust and can see some patena beginning."

"There’s already lots of reviews praising this awesome knife. The height of the blade and the food release are worth mentioning because they both make doing lots of prep easy and enjoyable. The finish on the choil was a bit rough on the fingers out of the box, but that was easily resolved with a bit of emery cloth and some sandpaper. Of course it’s sharp as a razor and holds its edge incredibly well, it’s a Moritaka."

"This knife is absolutely brilliant and a ton of fun to use, especially when it comes to cutting and chopping veggies. I actually prefer it to nikiris and others because of it's shorter length and the way it feels in your hand when using a pinch grip. Laser sharp out of the box, and just looks really cool and different. Can't recommend it enough. Only super minor complaint is I wish this came in Aogami Super, though Aogami #2 is still a great steel."
"Despite it's size this knife packs an amazing punch. It simply glides effortlessly through food and makes prep work a joy to accomplish, be it small or even through a full meal. It's smaller size than a regular gyuto or santoku makes it less daunting to approach, and its unique design peaks the interresse of my guests (everyone wanted to try it out). I will definitely check out more of moritaka ishime knife line, and recommend this knife to any who don't mind the maintenance of a carbon steel knife."
