Join us for a hands-on deep dive into the world of Miso and Koji-based fermentation, where traditional Japanese technique meets modern cooking. In this immersive workshop, you’ll learn how to make your own batch of Chickpea Miso from scratch - and take it home to ferment and enjoy over time.
Led by fermentation educator and friend of the shop Jonah Greenbaum-Shinder (Ottawa Culture Club), the class will explore how Koji and time unlock Umami. Discussion and tastings will go beyond Miso into the broader world of Shoyu, Amino Sauces, and other fermented staples.
