If you haven't had Tamago, you haven't truly lived. This magical fluffy Japanese egg dish is carefully folded, layer after layer, into a delicious pillowy egg rectangle. To properly make tamago you need a rectangular pan.

These pans are made outside of Osaka, in the Frying Pan Village and are treated with a process called “hard tempering”. Each pan is placed under a super hot gas flame, then oil is applied for to season it. They are quite non-stick from the get-go and can be endlessly re-seasoned for a perfect non-stick finish that allows you to craft perfect tamago.

"This pan is practically essential to cooking perfect tamagoyaki and in my opinion the best way to enjoy eggs! There's undoubtedly a learning curve to rolling omelettes, but once you get the hang of it they're a snap to make! It's a well crafted pan with a good weight to it. The carbon steel allows you to have decent control over the heat as you're cooking. Be sure to keep it seasoned and you won't have any sticky issues!"

Fun pan to learn classic technique

"Very happy with the build quality and size - good for 2-4 eggs. Makes much more neat and tidy rolls compared with round pans - the trick is navigating the corners. I suggest purchasing a small cake server sized metal spatula for use - square edges and small width are the trick."

"Can you make eggs in a round pan? Yes. Can you roll your eggs with a consistent width and increasing height? Not really, sorry. If you take your tamago seriously, you need this pan. There are cheaper ones out there but this one has more even heat distribution, an excellent surface, and tall walls (for increased height/diameter, fluffy tamago rolls). 5/5 would recommend."
