Blades like Shindo-san’s are the reason I fell in love with Japanese knives. The rustic design and ancient craftsmanship really drew me in, and chances are, it’s why you chose to get a Japanese knife too.
He works with high-carbon steel such as Aogami, a material prized for its incredible ability to hold an edge. Don’t let their rough exteriors fool you; these knives take a blindingly sharp edge and feel fantastic in the hand. Whether you’re just dipping your toes into the world of carbon steel or you’re a knife nerd like me, you’re going to love the way these knives cut.
Shindo-san was born in Hokkaido, the northernmost prefecture of Japan, in 1988. While attending university in Okinawa, the southernmost prefecture, he started his obsession with blacksmithing. The style of forging he had been fascinated with was unique to Tosa, so he chose to move to that area of Japan to begin his blacksmithing career. Seven years later, in 2019, he finally started his own workshop: Kyohei Tanzo.

"This nakiri is so light, and thin behind the edge but feels substantial because the spine is initially quite thick and tapers quickly. It's comically effortless for how it goes through root vegetables. Nicely sharp right out of the box. This being my thinnest knife, I do find myself taking a bit more care when cutting, and the edge will grab the cutting board if I have even a little twist when chopping or push cutting."

"Deadly sharp and excellent thin grind. KYOHEI'S knives are fantastic with nicer handle quality in this recent batch with the pakka furrells smoothly fitting at the blade end of the handle. The knife weight and detail in the hammer texture is nice with a high polish finish on the sharp edge. Choil is almost rounded and cutting is fantastic. I have included shots of how smoothly this has cut potatoe and onion."
