About the Shape - This is also a multi purpose knife, but with a slight vegetable bias. Santoku means 'Three Virtues' or 'To solve Three Problems'. The virtues or problems are slicing, dicing and mincing. Santoku is usually found in 160mm - 190mm lengths. These are more and more popular in Western kitchens due to the unique shape and smaller easy to handle size.
*Teak handles are a natural material and will vary in colour, from dark to light. If you have a preference please reach out before purchasing and we can check what we have in stock that might be suitable.
About Nigara Hamono -Nigara-san is a relatively new knifemaker out of Aomori prefecture, but they are not new as a company. The company has been around for over 350 years, tracing back to their swordsmith ancestors. Knifemaking is a small part of what they do; they also produce large steel beams and such for buildings! Go Yoshizawa, age 35, is a young blacksmith who is the company president's son and has decided to go back to their blacksmithing roots. He now makes unique and stunning tsuchime knives and some hand-folded Damascus.

"Very beautiful knife. Knifewear was easy to deal with."
"Thing is super sharp and makes me very happy to use it."
"We love to cook and have always used a generic knife. The Nigara SG2 Kurouchi Tsuchime Wa Santoku 180mm might seem like a big splurge. We've had this knife for over a month and it's turned into our goto knife for all types of chopping. The patience non pressured assistance to find the perfect fit for our lifestyle was next to none as the sales associate assisted with educating and building us to a knife that would fit our needs and lifestyle by asking lots of questions and getting to know our habits."
"I had purchased a few wonderful knives from Knifewear, during their online Garage Sales, but they were purchased based on frugality and naiveté. I finally went into the Edmonton store and members of their fabulous team helped me get a better sense of sizes, blades and handles. And then, I saw this exquisite knife. I got to feel the balance, perfect handle shape and it was transformative. (I’m not saying that I heard angels sing or anything but there was a serious shift in understanding and appreciation) And I have never regretted this purchase because every time I use this knife, and I use it daily, I think “Worth. Every. Penny.”"
"Phenomenal service from the staff who helped me pick out the best knife I've ever used!"
