About Seki Kanetsune - Established in 1964, Seki Kanetsune is all about duality in their blade production. They strive to create blades that are rugged, yet ultra-precise. This balance allows them to create spectacular blades, especially for camping, hiking, and hunting.
About the Shape - The Honesuki is a Japanese style boning knife. Originally designed for poultry and small animals like rabbit, it excels for many larger butchering and fish filleting work. It has a relatively thick heel for scraping meat from bones, and a thinner tip for precise cuts. You don't want to force this knife through bone, but it's perfect for cutting through cartilage and tendons.

"I was performing some work on their heating equipment and decided a needed a knife for hunting. Hunting season is over however they were nice enough to show me multiple variety and styles that would suit me. Great service and an amazing team."

"Blade is sharp and very agile. I love 70/30 bevels. Only two problems one the edge doesn’t go all the way to the handle that’s not so big of an issue. The main problem that I had was the handle fit. I can feel the steel over the wood. This makes it feel cheap like they just had some parts and threw it together. Fortunately when I wear gloves cleaning or boning meat I don’t feel it, however I know it’s there. Had I touched this knife before I bought it I never would have."

- Hey there Keith, basically the knife has a right hand bias, but it can be sharpened to be 50/50 or more left handed. If you check on this knife photo (https://cdn.shopify.com/s/files/1/0780/9439/products/st-sk4-honesuki-3_5000x.jpg?v=1660772620), which is a different, knife you'll notice the edge is a little larger on one side.
