About the shape - Inspired by the profile of a traditional European chef knife, gyutos are a multi purpose knife with a slight meat cutting bias and “gyuto” even translates to “cow sword”. If you want one knife to do it all, This is it. The longer blade typically gives the blade a forward balance that allows it to work for you. While the blade would ideally by slid forward or back while cutting, they are also great for folks that prefer to 'rock' their knife while cutting.
The 180mm Gyuto is great for those who prefer a smaller knife.
About Takamura Kurogouhan - Takamura Hamono(blacksmith) can be found in Takefu Village (Echizen) in Fukui Prefecture. It is run by 3rd generation blacksmith Terukazu Takamura who inherited the shop from his father Toshiyuki Takamura San. With over 30 years of experience, his blades are known for an extremely refined and long-lived edge.
This series of knives have been made with the beloved VG-10, a high-carbon stainless steel designed specifically for making knives; it brings sharpness, toughness, and stain resistance together in the best combination possible. The handle is made of Pakka wood with a welded bolster and is practically indestructible.

"Perfectly sized knife. We have a beautiful chef’s knife, but I found it a bit too big... I didn’t always feel comfortable using it. This Takamura 180mm gyuto is perfect. It’s smaller than many other chefs’ knives, but still perfectly sized for almost all jobs - onions, root veggies, chiffonnade, you name it. It’s razor sharp - absolutely amazing - and never slips off tomatoes or other tricky foods. I love the pocked sides because the food hardly sticks to the knife at all (a problem we have with our other chef’s knife). It’s gorgeous, superior quality, definitely an heirloom piece. I look forward to passing it down to my children one day."
